Seared Tilapia with Pico De Gallo and Fresh Green Beans

Last night while cruising through Instagram, I noticed someone had made homemade Pico De Gallo, and boy was I jealous. I commented on her post, and that I was going to make some tonight; and that's exactly what I did. I went to Walmart and purchased all of the ingredients: Tomatoes, Cilantro
 (My Favorite Herb), 1 lime and I already had 1/2 of a Yellow Onion in the Fridge and decided to purchase fresh Green Beans as well. I wasn't too sure what I was going to make with the pico de gallo, so I just thought him...let me go onto Pinterest to see what kind of recipes are our there for Pico De Gallo and Tilapia; thankfully I found one.
I cut up one tomato, 1/2 of a yellow onion and 1.5 hand full of cilantro, squeezed one lime over it all, sprinkled salt/pepper on it, mixed it altogether, and voila. While cutting, I put on a pot of boiling water and began to boil my green beans with some salt added and in a second pan, I placed butter to heat for my tilapia. I seasoned my tilapia with Obay seasoning and cooked it on both sides al dente.
While the salmon was cooking, I put my green bean in a heated wok with EVOO, Garlic Accent and Pepper. Once everything was complete I took a piece of salmon from the pan, immediately placed shredded cheese on top and lots of pico de gallo. I must admit, I was eating the toppings while the meal was cooking, because I really love cilantro and enjoyed every moment of it! LOL
Results: I thought it was an interesting way to eat Tilapia and would love to try it again. I ate my entire plate within about 10 minutes of course, but I think it was missing more flavor as it pertains to the meat. I would say that it was a very healthy dish and I didn't feel heavy or regret what I ate afterwards, but I am looking for more fun as it pertains to eating healthy food as well.
I would say try it out though. I may marinade some chicken overnight soon, bake it and then place pico de gallo on top with a rice or quinoa side soon....we shall see.
Oh yeah, I sprinkled parmesean cheese on top of my green beans; when this occurs, I ALWAYS eat all of my green beans FIRST!!!
