Making Burrito Bowls!!!!!!!

TAKE THAT CHIPOTLE! lol
Hey Everyone!! Here is another one of my RICE dishes!!! I promise I will find something healthier to eat, since I have removed myself from Pasta/Bread recently. I thought about going to Chipotle like most people do...but the thought of paying $8 and only being able to eat what they put in my bowl, wasn't sitting well with me. lol. Soooo I decided to make them myself. As you can see it wouldn't it a bowl..and i put wayyy to much on my plate...but the picture doesn't give the take of this meal any justice!!! I made everything from scratch and also used a Pace Picante' Salsa because I didn't do the best job with my pico de galllo...but hey...I'm a work in progress.
INGREDIENTS
8 Ounces of Jasmine Rice
1 Green Pepper & 1 Yellow Onion, Sliced into strips
Sauteed in 2 Tablespoons of Extra Virgin Olive Oil
1 Can of Sweet Corn
4 Chicken Breasts Sliced
1/4 teaspoon of cumin
1/2 teaspoon of Adobo (Red Top)
1 Package of Taco Seasoning
1 pinch of salt
1 pinch of pepper
1 pinch of paprika
Combine Chicken and ingredients in a large bowl.
Cook Chicken in 2 Tablespoons of EVOO
1 or 2 Cans of Goya Seasoned Black Beans
(My roomie requested more Black Beans)
Sour Cream
Shredded Lettuce
Shredded Cheese
1 Can Diced Tomatoes w/ Chiles & Cilantro
1 Teaspoon of Fresh Cilantro
 
Guacamole
1 Ripe Soft Avocado
1 Tablespoon finely chopped yellow onion
1 clove garlic, minced
1 Tablespoon minced fresh cilantro leaves
2 Teaspoons fresh lime juice
1/8 Teaspoon Salt
And there you have it!!! Fresh Burrito Bowls!! This will be my lunch tomorrow as well!!
